No Trick here: Pumpkin Seeds are a Treat this Halloween!
Did you know that when people say "it's what's on the inside that counts", they're actually talking about pumpkins?! This Halloween, when you carve your pumpkin for your porch (aka Instagram) save your seeds + roast them for a delish snack!
Pre-heat your oven to 300 degrees F.
Once you scoop out your seeds, separate them from the pulp + rinse with cold water.
Prepare a baking sheet with parchment paper + spread the seeds out in a single layer. Roast in the oven for about 30 mins to dry them out. Allow them to cool.
Turn the oven up to 400 degrees F.
In a medium sized bowl, toss seeds with 1 TBSP vegetable oil (or coconut oil), 1 1/2 TBSP brown sugar, 1 TSP ground cinnamon, 1/2 TSP ground ginger, 1/4 TSP ground cloves, + 1/4 TSP ground nutmeg.
Spread out on a parchment lined baking sheet (single layer) + roast in the oven for approximately 20-25 mins; or until fragrant + crisp.
*using the same method, switch up the spices to something savoury. Sea salt, chilli powder, chipotle power, garlic powder, onion powder, turmeric powder are all tasty options to try!
